If you live in Texas you know (or should know) that this weekend was absolutely beautiful outside!! Hello 52 degrees yesterday morning! I could deal with the heat of the afternoon if the mornings were chilly like that everyday. This morning I almost when back in for my jacket but decided to just embrace the awesomeness. However i did end up turning on my heater in the car. But I did have my sunroof open on the way in to work.
We had a pretty laid back weekend. We had dinner at Adam’s sister’s house Friday evening. Saturday we stayed home and worked around the house mostly. Well Adam worked … I had a bad headache so I didn’t work much. I did try a new slow cooker recipe for Chicken Fajitas. They turned out pretty blah and tasted more like boiled chicken than fajitas. Adam simply refused to eat them. However I wasn’t about to let 3 chicken breasts go to waste. So I put all the shredded chicken and peppers in a skillet, dumped in some Taco seasoning and a little water and turned them in to chicken tacos. After a second tasting they passed the Mr’s taste test and we had some yummy soft tacos. I still have a huge bowl of leftover meat but I will probably end up bringing that to work for the ladies here. During the fajita/taco making fiasco Adam asked if I would make him a cake. Well I dug around in my cake mix supplies to see what I had on hand. We decided on a yellow cake with chocolate buttercream frosting. What? You don’t have cake mix, powdered sugar, and Crisco on hand all the time? Hmm maybe I’m just weird. :)
By the evening I had finally kicked the headache so we watched a movie on TV and then went to Wal-Mart for a late night grocery run. I had realized after making the cake that I had used up all the eggs and we had eaten the last of the bacon and bread that morning. We are trying to not eat out quite so much so we went off to get breakfast supplies.
Sunday we did a few errands in town but since we did our grocery shopping the night before and there weren’t any interesting movies playing we decided to just head back home and chill out. I finished up my gifts for my swap partner (EXCITED!!) and did some laundry. We got caught up on some DVR shows; Grimm, Bar Rescue, & Top Gear.
Overall a relaxing weekend that allowed me to get caught up on sleep and house chores. Adam is VERY happy to have both socks and underwear in his drawer rather than a basket on the washer. ;)
I’m hoping for a great week with great weather!! It ALMOST feels like Fall!!!

It's always a bummer when a Pinterest recipe doesn't turn out as good as it looks in the picture. You do all that work for nothing. At least you found a way to salvage it though!
